Shiraz Poached Pear & Chocolate Tarts

Ingredients

  • SWEET SHORT PASTRY:
  • 250g Plain Flour
  • 125g Chilled diced butter
  • 1 egg yolk
  • 25ml ice water
  • SHIRAZ POACHED PEARS:
  • 3 Pears
  • 375ml Shiraz
  • 200ml Water
  • 3 whole star anise
  • 50g Brown Sugar
  • 1 vanilla pod – cut lengthways, seeds scraped out
  • 1 tbsp of ground Cinnamon
  • Zest of 1 Orange
  • CHOCOLATE GANACHE CREAM FILLING:
  • 300ml Double Cream
  • 75g Dark Chocolate

Instructions

SWEET SHORT PASTRY: Place the flour and the butter into the food processer and process until it has a breadcrumb consistency

Add the egg yolk and iced water – blend together

Turn mix out onto the bench and gently knead until it comes together, wrap in plastic and place in the fridge to rest for an hour or so

Roll the pastry out onto the bench and line your tart mold, using your fingers to push the pastry into the curves, place back into the fridge for 5 mins to firm up again

Preheat your oven to 175 degrees, place some baking paper and some baking beads into your tart base and cook for 15 mins then remove the beads & paper and cook for a further 5 to 10 mins until pastry is dry

SHIRAZ POACHED PEARS: Using a melon baller scoop out the seed part and peel the pear

In a pot place all the ingredients with the pears and cover the liquid with a disc of baking paper (cartouche) simmer until pears are soft.

Cool pears in the pot with the liquid. Pears in the liquid can be stored for a week in the fridge

CHOCOLATE GANACHE CREAM FILLING: Whip the cream until its fairly firm

Over a pot of simmering water melt the chocolate in a metal bowl

Scrape the melted chocolate into the cream and gently mix together

Place the mix into the fridge to firm up

To serve lay the pears out on a clean dry cloth to remove any excess liquid as this will make the pastry soggy, cut in half. Spoon the ganache into the pastry bases and place the pear on top.
