After completing a degree in design from Edinburgh College of Art in 1987, Paula arrived in Sydney and worked as a printed textile designer for four years. In the early 90’s she relocated with her partner back to Scotland to run a hotel on the Isle of Skye for a further four years. In 1998 an opportunity arose for them to rescue a fading restaurant and lodge in the Hunter Valley wine country region, which resulted in the launching of The Hunter Country Lodge with Shakey Tables restaurant.
It wasn’t just Paula’s culinary skills that brought the restaurant much attention but also her vibrant whimsical artworks that adorned the dining space. Paula has exhibited within wine country several times and many of her artworks can be seen on property signs and on festival brochures.
Paula has been running a sustainable kitchen for more than 20 years, long before it became a buzz word, with partner Simon have been growing and serving their own produce. The most successful by far over the years has been their pasture raised suckling pig which now can be delivered to your door, complete with all the bells and whistles which go to make a suckling pig dish sparkle!
Paula is currently studying a Masters in Gastronomic Tourism and would like to share with you her curious culinary findings and her passion for all things gastronomic.
